WThis is a home-style version of a beverage found on the seasonal menu. Designed as a party-sized pre-mixed which is loaded full of flavours of the festive period, rendering it perfect for hosting a festive gathering. Any leftover cordial to use in brunch beverages, desserts, or for more rounds of the drink.

To make the Clementine Cordial (makes 750ml)
300ml newly squeezed clementine juice
200ml fresh lemon juice
500g fine sugar
Ingredients for the Drink (makes 850ml, serving 10)
400ml good quality vodka
100ml classic gin
150ml peach schnapps
200ml clementine cordial (see above)
A few cranberries, to garnish
Mandarin essential oil, as a final touch
Instructions
For the Cordial: Put every items in a pan, heat until it reaches a gentle boil, stirring until the sugar dissolves. Next, remove from the heat allowing it to cool down fully. Transfer into a sealable bottle, cap it and refrigerate it in the fridge, where it will keep for up to four weeks.
To make Premix: Combine all the liquid ingredients into a sizeable container, let it rest for one hour, then pass it through preferably using a fine cloth, making it fully clarified.
To serve: Measure 85ml of the batch mix into your cocktail shaker containing ice, and stir lightly for about 60 seconds to cool it down. Filter into a chilled martini glass or equivalent, garnish with a few cranberries adding the final touch with a quick spritz of the essential oil over the top.
